#Stuffed Eggplant - Bharwa Baigan

Bharwa baingan

Bharwa baingan is an Indian style stuffed eggplant curry. Bharwa baingan masala is made by onions and tomato paste by adding some powder masala paste in it but I add a special ingredient to make it special the ingredients which I add is peanut. After adding peanuts the taste of bharwa baingan is totally different.

So let's start.......

Ingredients:-

1/2kg small baingan (8-9 small)
1 medium size onion 
7-8 cloves of garlic
1/2 inch Ginger
2 medium size tomato
1 handful of roasted peanuts
1/2 tsp of methi dana seeds
2-3chopped green chillies
Half teaspoon turmeric powder
1-2 teaspoon of chilli powder (as your taste)
Salt to taste
Chopped fresh coriander for garnishing

Method for bharva baingan:-

  • Heat a non stick pan and roast the peanuts for few minutes and keep aside.
  • Let it cool down. 
  • Take a grinder make a paste of onion, garlic, tomato, Ginger.
  • Take another pan , pour 4 tablespoon of cooking oil.
  • When the oil is done add methi dana seed don't let the methi dana seeds burn.
  • Now add green chilli. 
  • After adding chillies add the paste we made.
  • Saute for few minutes. 
  • Till then the masala is getting ready take a bow with water and put splited baigan.         ( splited in four pieces make sure you does not have to cut till the edge.)
  • Now and turmeric powder, chilli powder and salt to the mix .
  • If the masala is sticking on bottom you can add half cup of water, don't add to much.
  • Give a good stir.
  • Let it cook for few minutes.
  • Till then grind the roasted peanuts, make sure you doesn't grind in a powder form.
  • When this masala start leaving the oil on the edges that means the masala is ready.
  • Now when the masala is ready add ground peanuts.
  • Mix well and leave it for couple of minutes
  • Now it's time to add splitted bengan.
  • But there is a technique at add Bangan.
  • Take baingan, handle it from the stems and put the masala in the splitted bangle and leave in the pan.
  • Continue this process for each and every baingan.
  • You don't need to take another plate for this process.
  • You can directly put the masala in splited Bangan and leave in the pan.
  • Now give good stir and put on the lid.
  • If you are cooking in a pressure pan pressure for 5 minutes or 7 minutes not more than that.
  • If you are cooking in pan pour some water before putting Lid.
  • Cook for at least 10 minutes. 
  • After few minutes you can check whether the baingan are done or not if not put some more water and put on the lid.
  • Now when bengan are done garnish with fresh coriander leaves.
  • Your bharwa baingan are ready to serve 
  • enjoy with hot chapatis.

Note:-

  • If you want best flavour Surely add grounded peanut.
