It takes 5 mins to cook "achari aloo"

this post is all about something fast and quick recipe. Sometime it happens you don't have time and you want to make something quick. Sometime It also happens that you want to eat chatpata something spicy which you can store for 2-3 days. Achari aloo is one of best recipe for quick and easy recipes.
For this dish you just need dum aloo if you don't have the dum aloo you can also use the medium size aloo by cutting them into 2 or 4 big pieces.
You just need to boil the potato and peel them and keep aside to cool down a little bit. After this shallow frying is totally optional step. If you can shallow fry you can do it or you can directly go to tadka step.
Take a pan heat mustard oil on medium flame and let the smoke come out. When the oil is ready add dry red chilli, cumin seeds, mustard seeds, Nigella seeds, Fenugreek seeds, chana daal, fennel seeds and saute for few minutes . When it's done add turmeric powder, don't let it burn. now add aloo (potato) mix well.
Now it's time to add dry ingredients, add chilli powder, crushed coriander seeds, Ginger powder ( grated ginger) , hing powder, Salt , give a good stir....
Saute for few minutes and add little water and put on the lid...cook for couple of mins. Let the oil get separated properly. Your ACHARI ALOO are ready to eat. Serve hot with roti , paratha or lacha paratha....
You can store it in air tight container for a week in refrigerator. But why to store? It's so yummy you can eat it whole and YOU CAN COOK IT AGAIN IN 5 MINS ANY TIME.

Achari aloo : quick & easy

Ingredients:-

250 grams of dum aloo
(If you don't have the dum aloo you can also use normal small size potato just cut them into half)
5-6 tbsp mustard oil (Sarson ka tel)
2-3 dry red chilli ( khadi laal mirch)
1 tbsp mustard Rai
1 tbsp cumin seeds jeera
1 tbsp Nigella seeds kalonji
1 tbsp fennel seeds sauf
1 tbsp Fenugreek seeds methi dana
½ tsp turmeric powder haldi
1-2 tbsp crushed coriander seeds
¼ tsp of asafoetida (hing)
1 tsp Ginger powder ( or grated ginger)
Salt to taste
Chilli powder to taste
1 tbsp chana daal optional
1 tbsp amchur powder optional

Process:-

  • Firstly take heavy bottom pan , add water and let it boil.
  •  till then wash the aloo (potato) and keep aside.
  • When water starts boiling add aloo and little salt. Cook for 5 to 10 mins.
  • You can Also cook your aloo in pressure cooker. For 2 - 3 whistle not more than that.
  • when the aloo (potato)are done peel it.
  • After this you can shallow fry the boiled aloo (potato) till golden brown, but it's totally optional, you can skip this step. I have also skipped this step.
  • Now keep all the given ingredients  ready.
  • Take pan add mustard oil, heat it properly. Let the little smoke come out. Now you can smell the fragrance of the oil.
  • Oil is done start adding ingredients 
  • (Mustard seeds+cumin seeds+ fennel seeds + Fenugreek seeds + chana daal+ kalonji + dry red chilli ) 
  • Give a good stir. Don't let it burn.
  • Now add turmeric powder and mix well.
  • Add boil potatoes ( aloo).
  • Mix and saute for few minutes.
  • Now add dry ingredients ( chilli powder + crushed coriander seeds + hing + Ginger powder + salt + amchur powder )
  • Mix well.
  • Add little water and cook with a lid on. Don't add too much of water.
  • Cook for 2 mins 
  • Remove the lid and mix well.
  • Let the oil get separated properly.
  • Mix well. If you want Garnish with chopped coriander leaves.
  • Now "achari aloo"is ready to serve with roti, paratha, lacha paratha or puri.

Notes:-

  • Small size aloo will be best for this dish 
  • Don't peel the aloo before boling.
  • Keep ready all the ingredients defore cooking process because it take only 5 mins to cook.
  • You can store it in a air tight container for next few days in refrigerator.
  • Serve hot.
